I love fall. It gives me all the warm, fuzzy feelings with its sweater weather, cups of hot chocolate, and all the baked good that fill the nostrils with sweet nostalgia.
Fall is when I bake the most. So bear with me as I crank out pies, cookies, bread, and other baked goodies in an attempt to perfect each one.
Here I share a banana bread recipe that I’ve been working on. It’s not a typical banana bread recipe, and definitely not your mama’s. This one in particular is bourbon-spiced and everything nice!
Spiced Banana Bread
Prep time: 15 min | Cook time: 45-50 min | Temp: 350F
Ingredients:
½ cup butter
¾ cup white sugar
¼ cup brown sugar
½ tsp. salt
1 ½ cup unbleached all purpose flour
1 tsp. baking soda
1 ½ cup mashed bananas
2 large eggs
2 tsp. ginger
¼ tsp. nutmeg
½ tsp. cinnamon
½ cup sour cream
¼ cup Bulleit â bourbon
Directions
Preheat your oven to 350F.
Mix the flour, baking soda, baking powder, and salt. Set aside.
Cream softened butter with the white sugar for about 2 minutes or until light and fluffy on medium speed.
In a separate bowl, mix mashed bananas, eggs, vanilla extract, ginger, nutmeg, cinnamon, and bourbon. Mix well.
Fold in the sour cream
Fold in the creamed butter until evenly distributed.
Add flour mixture in slowly, about 3 separate times. Careful not to overmix.
Pour mixture into a greased loaf pan. (for more OOMPH! coat the pan with cinnamon sugar after greasing)
Bake for 45-50 min or until a toothpick inserted comes out clean.
Let it cool before transferring out of pan.
I also love to add semi-sweet chocolate chips in here, but I figured to leave it out this time so that the main focus is the spiced bourbon. This particular bourbon is mine and my hubby’s favorite whiskey. It’s full of flavor, and it shows in this banana bread. Adding chopped walnuts is a great addition, but for the sake of my son’s nut allergy, I’ve also left it out.
And if you’re worried about this being kid-friendly, it totally is! The alcohol evaporates in the baking process leaving just a perfect hint of spice. No drunk toddlers will result in the consumption of this bread!
